  • ABSTRACT: There are not found investigations about objective mathematical evaluation of the type of olive oils by using only the color parameters, with-out using chemical parameters. By applying discriminant analysis it is possible to help selections in the establishment of the type of olive oils. By applying statistical methods it has been proved a difference in physico-chemical characteristics of olive oils from different types and different countries. It gives a base for effective description of different types of olive oils by means of discriminant analysis. For better visual interpretation of results canonic analysis has been applied.
